Your onions needed more time and you needed a stronger sear on your steak. You can achieve the latter by straining the steak (save the grease in a bowl), heating your pan up super hot and throwing your steak back in. Turn off the heat once you get a nice crust, then add the grease and mix in your onions. Also, I've found that crusty french hoagie rolls or Amoroso's work much better for cheesesteaks than bastard rolls, italian, or french bread. Either way, you definitely want to toast or bake your bread for a nice hot sandwich.

I got some steaks (charcoal steaks, pretty tough cut of meat honestly) and I made one in the traditonal manner but they are just simply too tough to enjoy. I was thinking of making cheese steaks with them. If I had em half frozen and pulsed them up in the food processor what do you guys think of that. I dont think slicing them thinly would help much with their chewyness

OK, frog enthusiast, if you want a serious answer, then add mayo to the bread (inb4 wypipo) and copious salt & pepper. Mushrooms are great; bell peppers, too, if you want to get all hoity-toity. It also occurs that slightly toasting the bun would be nice.

What cheese? We generally use yellow American. According to Intarnets, Pat's says that provolone is OG. But whiz or "cheese sauce" is properly on fleek.
