I still haven't figured the secret. I can generally do it no problem, though I do occasionally fuck up a yolk or two and leave a bit of egg white behind on the bench.

Doesn't help that every egg is different. Some are short and fat which makes cracking them harder, some have thicker membranes which makes them harder to split, some have incredibly thin shells and just fucking shatter and cave in.
