What is chicken meat being "vulnerable" like glass a sign of? It was way more easy to cut than usual, pieces of it stayed on the pan and a lot of it mashed while frying, I could barely feel the spices while eating it.

Is it a sign of being really, really fresh?

Something like this, but to even smaller pieces while also leaving some big ones. If the way I described it makes sense.

Also It was so easy to seperate the pieces while cutting them raw, that I could do that with my own hands
