What's with chinese takeout rice? How do you reheat it? It gets all dry and hard after it's been in the fridge

https://en.wikipedia.org/wiki/Retrogradation_(starch)

Basically anything starchy that's leftover seems stale pretty quickly due to how cooked starch works. Happens with bread and potatoes too.

Just sprinkle a little water over it so it'll steam, and microwave it for 30 seconds at a time, stirring after each 30 seconds, until it's just hot enough. Don't wait too long to eat it after reheating or it'll start to seem stale again.

Is the pro strat for reheating chicken in a microwave similar, or am I doomed to each shit ass chicken at work since a microwave is all we have for reheating food?

to add to this, loosely cover the food with something like a paper towel to keep too much moisture from escaping while reheating.

If it's not fried chicken, I find it's okay if you cut the chicken into small pieces and spread them out so it doesn't have to be microwaved as long as one big piece. It also helps if you let the food sit out for an hour or two before reheating which is less time it has to spend in the microwave. And if you can cover it with some kind of sauce before microwaving that'll obviously help stop it from drying out too.

this is what I do, worked perfectly. For generals chicken/honey garlic beef etc. just put it in a little pan on the stove and heat it until it's hot. the dry heat will keep it from turning soggy
