you can use it in place of corn/potato starch when it's used as a thickener, but if you use too much it makes sauces/soups kinda gummy

Perfect, foolproof mayonnaise, vinaigrette, hollandaise, any emulsion really. I use it as a stabiliser more than a thickener. Get you some trisodium citrate for cheese sauces and guar gum for creamy sauces and ice cream. Thank me later.

Also, anyone know of a thickener that creates a syrup-like consistency, like honey or molasses, without tasting sweet? Anyone try tylose?
