I liked Chen Kenichi and Hiroyuki Sakai the best, they had fun and humble personalities.

The "Japan" chefs always kind of seemed dickish is their own unique way.

I've not watched a lot, but I liked Sakai and Kenichi. I liked how this show gave a more detailed background of the challenger compared to the American version. Also the chairman character is more integrated in the narrative. In the American vers, after Mark reveals the ingredients, he doesn't serve a purpose.

The American judges gave more detailed analysis during judging. I prefer Alton Brown giving the play-by-play over the Japanese judges and the two commentators. Too much back and forth.

Sakai's food was almost always the prettiest, but he often took a "poor me" stance on non-French ingredients. I'll have to go with Kenichi because I felt like we saw the most growth out of him across the series.

All of them? I feel like some are lacking. There use to be a website where you could access a ton of episodes, but I get an error when I check it now. I've got 200+ episodes (nearly all of them dubbed, some of them subbed) saved to a hard drive and I feel like I'd be hard pressed to find that many on YouTube or elsewhere.

All of them, really. They all had different personalities. I felt so bad for Kobe cuz he never got enough air time since being the youngest. I wanted Sakai to be my uncle when I was a kid, he seems so genuinely nice. Morimoto will always be my least favorite because he was always so serious and never smiled. Michiba was an old fart and a hard-ass but in a good way.
