I left my pan out overnight without washing after cooking bacon. I plan to make chili tonight. Can I just use the bacon grease in the unclean pan instead of cleaning it and using canola or olive oil?

Of course. I do that all the time. Realistically, I only will wash a pan maybe once a week.

I assume "left pan out overnight" means on your stove, not outside in the rain or something. It isn't really harmful to cook in "old fat", in fact some restaurants have been going for a very long time without completely cleaning out the fat from the pan. Just heat it for a couple of minutes before cooking to make sure there is no bacteria or anything.
