..I used to make pizza crust from various grains, before I (individually was coming up with) starting keto -- ground oats were fundamental for a while, and quinoa and buckwheat (together) were a rare example of dense micronutrition. (A ketosis-savvy iteration bases on powdered protein: casein and whey, such as of a ratio similar to milk.)
