Pig snout has very little flavor and is mostly cartilage. There are also little hairs on the outside that are damn near impossible to remove. I really can't recommend it, even for soup (ears, hocks, and trotters are all better for that).

Not cartilage, the are mostly just skin. They have a lot of collagen and are pretty good when added to beans. Also great if you find a place doing whole pig carnitas that has those braided bits of tripas. And if headcheese is your thing, perfect for that as well.

Also brings back memories of being on the head table and removing the ears, cape, snout, tongue, jowls and cheek meat from hundreds of pigs a day. Good times.
