There are many problems with your pic related. It’s essentially a tastelet, low-class Asian immigrant idea of a huge feast. The dead giveaways are those chairs, the shitty chili sauce, the broth that is way too thick and probably from a mix, its extreme meat heaviness, the shitty arrangement of the meat (literally right out of the Korean market, or worse Chinese market package, plopped onto a plate, center probably still frozen, no way to get a piece without touching other pieces), a miserable selection of greens, literally paper towel rolls. those shitty glasses, shrimp not de-turded, and WHERE THE FUCK IS THE RICE, and no noodles.

This motherfucker should have squash, pumpkin, multiple types of mushrooms, corn, baby corn, spinach, cabbage, meat looped over and spread out so you can grab one without your AIDS spreading, rice, udon, real fermented chili and bean/chili, a lighter broth that doesn’t look like Texas chili, things like par-cooked quail eggs, chicken eggs, and please, pretty please, proper place settings and tools (spoons, slotted spoons, mesh strainers).

When we have hotpot together, the spread looks pretty similar, though we also like adding scallions and cilantro as greens. We also like potato slices, lotus root slices, and spam in hotpot. Basically, there's a certain level of military rations where you're getting mostly shelf-stable food like sausage, canned meats, processed cheese, instant noodles, plus some seasonal or cheap vegetables. Throw that all together hotpot style, and you'd got Army Stew.

And for the ingredients get some thin slices of meat like beef or lamb, fishballs, tofu skin, veggies, mushrooms, noodles, dumplings etc... if you want more ideas of ingredients just look up ayce hotpot menus and don't forget to get a good old drink to go with.

There's a Chinese hot pot place near me, but I haven't been there since they had to shut down back in February after business plummeted.

Neat little setup, to be honest. Each table has a couple induction elements, and you order your choice of soup base plus a spread of ingredients. It's kind of single-serve and not really geared for sharing, but that's alright for the portion sizes you get. Honestly, as a business, it makes a lot of sense, since almost all of the ingredients can be served pre-cut and frozen. All the staff has to do is prepwork, which can sit for days, and make the soup bases, then serve. They also do quick grilled side dishes like potstickers and such.

Funny enough, the place they're in used to be a popular Greek restaurant. Real kitschy old place where they old guy who ran it would get upset if you showed up wearing a necktie. They ended up moving into a bigger space next door after the new development was finished, so they could have a proper sized bar, but the atmosphere just isn't the same.

It's still great, I use fried shikake mushrooms, tofu, kimchi and djoubangiang (the bean paste)

I actually went through Chongching, the hot pot capitol of China (Chengdu fags BTFO) and can answer questions.
