Culinary lore.com is wrong. Neither amaretto nor Dr.Pepper tastes like a cherry. At least not a fresh cherry. If you haven't tasted a good ripe cherry in the warm breezy May afternoon or peeled and cracked an almond on an arid August morning you won't know the difference. The problem is the misnomer name of it all. Amaretti/amaretto is not almonds, though some modern formulas may now include it. It is/was made from the seed kernels of apricots, and they look like almond-like, even, are vaguely reminiscent of blanched almond flavor, but in fact they are what bring in that complex almost cherry flavor.

Thigh is definitely preferable for me. Obviously if you just sear your breast off and finish it in the oven it[ll turn out juicy and delicious every time, but with thighs I can skip the searing step completely, just shake them up in a bag of seasoning and bake them off. Much less effort to get a good product.
