just made blackbeans and rice with mushrooms and spinach. only spices were salt and pepper. it was pretty good.
what are some other cheap and easy rice or noodle based dishes?

paella if you find cheap seafood but you can sub for whatever you have
you can also save plain rice or noodles and do a stir fry with them the next day with one of those cheap frozen stir fry veggie bags and whatever protein is on hand

and just put each serving per ziplock and throw them all in freezer
so when you want to make something with in just thaw one zip lock at a time
personally I find fatty pork taste better with all the fat mix in it it just great that it is also cheaper

also I think spam were never truly cheap

i should watch some youtube videos on how to cook pork, it is much cheaper. i think i don't trust myself with cooking meat, which is another reason i don't cook much meat.

pork is easier to cook because you dont have to worry about overcooking the pork, you always want well done
and you can always flavor it up with whatever
just chop some garlic and throw it on the pan then throw some porks on it
add whatever combination of condiment you want like soysauce/mirin/ponzu/fishsauce/oystersauce
then just stir it until its done then you eat it with rice/noddle
with grounded pork you can also sometime just add it to soup with it or throw it into your instant ramen and dont feel like you are wasting good meats

nice, instant ramen can be pretty good with hacks, just adding veggies and eggs. i've never added meat to it though.
i'm a beef guy, but i could see pork becoming my go-to, as it's very affordable

Whenever i make rice i always make too much so that i can make fried rice 2-3 days later. Break the rice up into mostly individual grains, fry until its golden, add soy sauce, fry for a couple more mins and mix with cooked veggies, meat, eggs, whatever.

fry up some chickpeas and pumpkin seeds in your oil of choice (I prefer rapeseed, due to it handling high temperatures and being dirt cheap), cook some rice, mix with the fried chickpeas and pumpkin seeds, fry in the pan for a bit, drizzle some salt, or maybe some seaweed on top, serve.
it's a nice side dish, and it's delicious in a wrap.

a good option would be fried rice. Take left over rice from takeout and freeze them. Take them out to make fried rice with your salt, pepper, and teriyaki sauce. But go lighter on the sauce, as you want to just use it for coloring your rice and other stuff in the fired rice. Add whatever else you have and want into it.

same dish but make a dark roux first. blanch the spinach and dissolve a stock cube in after, use that for your beans. fry some onion and garlic in the roux and deglaze with a bottle of dark beer
