Seriously though, making soup from fresh ingredients is kind of faggy.
Kind of like stock.
I make soup out of leftovers. It is a great way to get the last nutrition out of a food, that's literally what it's for.

Don't tell me you guys go to the store to buy items to make stock out of.

That's why bone stock isn't a 'wonder cure'.
It just breaks down collagens and lipids into ever more simple forms. That is nutritious and can be used, but boiling out a potato peel until every chemical is the most common possible in 212F water reduces the nutrition.
It does of course increase the amount of nutrition available from raw meat or vegetables, the same as any other cooking process. But soup has the power to break down already cooked and less-nutritious materials to something you can use.

Using brand-new ingredients in soup and stock is a waste of nutrition and something only wealthy privileged people do.

That's because 'anti-oxidants' are just molecules that 'want' to react.

They will hang out in fresh veggies as part of the growth of the vegetable.

They decay over time.

Heating decreases the time of decay. Chemical reactions occur faster in higher heat states.

When you break down the chain of molecules by increasing the rate of degradation, you make less nutrients available for the body to break down. Skipping the chain as it were.

Old leftovers are already broken down past their optimal nutrient availability.

By cooking a soup, you make elementary molecules available and by adding some ingredients, increase the quality of already leftover foods.

Making soup and stock from fresh store-bought ingredients is a privilege of wealthy people.

Unlike what the veggie faggotrons believe, humans can't properly digest raw vegetables, especially highly fibrous ones. And some raw plants aren't actually very safe to eat raw (rhubarb, potatoes, some beans).
So most of the hypothetical nutrients get shat out the ol' poophole anyway.

But humans do benefit from highly fibrous raw veggies, i.e. Insoluble Fiber, i.e. Cellulose.

Humans have some of the bacteria present in termintes, present in their guts. These bacteria produce waste that is nutritious for the epithelial cells of the gut lining.

This, however, is a part of diet, not the entire diet. Humans evolved to eat cooked red meat.

You get the same bonuses, plus some extra beneficial bacteria, by occasionally eating those fibrous vegetables (cabbage, carrots, celeriac, cauliflower etc.) in a pickled (brine-fermented, not vinegar) form.

That is an overemphasis on lactobacillus. A properly nutritious gut load will promote healthy bacteria in balance.

Protozoa and their symbiotic bacteria certainly play a role, but I have not read a description of this in the human gut. My reading is by no means comprehensive and I am not claiming that research doesn't exist.

All I'm saying is that there is an optimal level of cooking and microherd balance in the gut, over-emphasizing even beneficial fauna like Lactobacillus is not perfectly healthy.

Then there is the fact that humans can survive and even thrive on unbalanced conditions.
