They usually violently stink after a day of work. The issue is that we actually don't use a base curry and make the curries separately. this means a lot more time getting your hands involved with the chili, cardamom, turmeric. So yeah we all smell like indian food aggressively at the end of the day.

Yes, it is extremely diverse. Indian restaurants in america can only really do broad strokes of the most common dishes from north and south india (they ignore the west and eastern regional dishes usually)
Anyways my fav dish is gonna have to be biryani, specifically lamb biryani. Biryani is a spiced saffron rice dish with potato. Its mixed rice and can be compared to mixing a curry, later combining it with semi-cooked rice separately.
Its cooked by letting the dish breathe in its own aroma or juices to make it more flavorful. large pots are sealed with dough or cloth to trap the steam, which then cooks the meat and rice until tender.

Thanks for responding. I hesitiated to ask the question, not so much because of the expected "poo in loo" jokes, but because a lot of Indians and Indian-Americans seem to have an inferiority complex and get angrily defensive. (Because the jokes get old, and also because they know that India does have certain sanitation issues.) But personally I find the old-country taboo quite reasonable, and I would not think anyone "backwards" for continuing to follow it.

Compare: When I was growing up, we had no problem with wearing shoes in the house, but I know people (not just Asians, but certain Eastern Europeans, among others) who find that practice disgusting. And even though Americans in urban/suburban areas are not routinely walking through horse & cow dung during our daily errands anymore, I do accept that the practice of switching to indoor shoes/slippers is not only more hygenic, but also more civilized, even today, and so I have generally changed my own habit.

The original question has a more general practical aspect. For example: When shopping at Indian grocers in the US, I have sometimes wondered if I inadvertantly caused offense to the qt3.14 desi-auntie cashier by unthinkingly giving her money or receiving change with my left hand. (Even though money is not food; it is filthy anyway.) Now, this is America, and she should not actually be surprised or offended. But still, I have entered a place which is almost like an "embassy" of a foreign culture. (America is not England; Indian food is still exotic here, not assimilated.) And if I can do a little something extra to show respect, something that is easy and morally unobjectionable, then why not do it?

Based question, its called "stone flower" but its actually a lichen. Dry ground kalpasi has little or no smell and should be roasted in little oil to get its actual and full aroma. It has a distinct smell, which it would impart, if used properly i.e. after roasting (also depends on how and for how much time you marinate). Its generally used in combination with other spices like cardamom, cloves, bay leaves, cinnamon, nutmeg, star anise, saffron, peppers etc. for flavor.
On its own, it can't add much flavor.

How to use: simply ground the kalpasi up and mix it into your masala mix, and use the masala with your biryani or whatever as you normally would

Kalpasi is one of those things that give the "indian restaurant" flavor to your food

South Asia shits out 2 million garbage jawa coders every year. There's nothing they could do that an American couldn't do. American universities are far better than whatever engineering college Indians went to. The skills gap exists in the reverse direction.
The reason they're brought over here is because they can be made to do more work for the same (or lower) pay. Their managers have to sign the H1B forms periodically, and as long as they have that power, the foreigners are at the mercy of their managers. So if you don't want to lose your H1B visa, you have to work overtime and be on-call, or do anything else your manager requires.
Then there's the problem that Indians are happier to have a lower standard of living, since anything is better than living in India. Americans have no reason to accept a lower pay and a lower standard of living.
