The risk is exaggerated by the fact that the government had to prevent restaurants from killing people so they laid out a excessive set of guidelines and temperatures for how meat and eggs needed to be cooked. This trickled down into the generic public consciousness, and gets passed down from generation to generation because someone knew someone who's great grandmother died from salmon mousse that had been left out under a heat lamp too long.

You're more likely to get food poisoning from poorly washed raw vegetables, especially things like sprouts which can grow large colonies of bacteria. The vast bulk of food poisonings and recalls are for produce.

The thing about eggs in the USA is that they wash them. Eggs are laid with a natural protective coating, washing them removes that which is why eggs are displayed in a refrigerated part of the store in America. But for example when I went to Sweden, Coop and Ica have them laid out next to onions and other shit unrefridgerated, because they havent been washed and will keep better.

Also it takes a long fucking time for US eggs to go bad, you can eat them WELL past the expiration date and be fine.

I wonder this because a lot of times people will use the same utensil to stir something that's being cooked throughout the whole process; using it to push raw meat around in the pan, etc and continuing to use it until the end. Wouldn't the bacteria get from the meat to the utensil, and then continue to be mixed around in the food?
Sure, if you mix the *entire* time the utensil will get hot enough to kill the bacteria, but I've seen people do this even when they put the utensil to the side while preparing some other part of the meal, then come back and use it to stir some more, etc. For instance, my Asian sister-in-law uses long wooden chopsticks to stir and flip things and so on, then uses those same chopsticks to eat her finished meal.

If you understand how cross contamination works and know which food products are prone to carry bacteria, it is fine to use your own judgement and not think about any guidelines.
Reusing the same utensil is definitely a cross contamination risk. Personally, I would only do so for hotpot and deep frying, where I know that the chopsticks would be sterilized in the hot water or oil.

Off on a related tangent here: Certain things like rice can harbour B.cereus, a bacteria commonly found in soil. While normal cooking temperatures do kill the vegetative cells, the dormant spores require higher temperatures to kill off, typically not reached in boiling water. As a result, once the food reaches a favourable growing temperature again, the bacteria begins to reproduce. The food is completely safe to eat until the bacteria have formed in significant numbers at which point it causes food poisoning.

And no, the utensils you use when cooking do not get hot enough, but they also don't typically sit around long enough to grow bacteria, nor do they provide a good environment for bacteria to grow.

This logic only really holds if you're doing a stew, which is probably the most foolproof cooking method when it comes to food poisoning. Stir fry just doesn't get the food hot enough for long enough to 100% remove the risk of food poisoning, much less the utensils which only get hot for short bursts.

Some people will make that justification. Then they come unstuck in the future when some recipe asks you to cook your stir fry in batches and you don't end up cooking the veggies for as long as your chicken to maintain crunch. Or you cook a curved vegetable that is making poor contact with the pan and conducts heat worse than meat. Safe habits.

Though overall I prefer the chef haphazardly putting on one glove to slice meat for my banh mi than the arsehole at maccas who puts his gloves on before his morning shower and takes them off after his evening wank.
