What's the best way to cook them?

All of the above. Chicken thighs are also the best for making chicken (burger) patties; trim them, grind them up, mix with 1 beaten egg & some breadcrumbs, form them up and then cover in the remaining breadcrumbs. It's a lot of effort but worth it.
