Bad pork belly is kinda gross, I normally get it from the hippie weirdos at the farmer's market but I've gotten it at the grocery store and it oozes a weird smelling liquid.

Also the flavor of the fat is completely different depending on the animal's diet. I don't fuck with CAFO pork except if I'm going to grind it up and mix it with a bunch of spices and sugar.

I think americans would be a lot less afraid of meat if their animals were better fed and better taken care of but I can totally understand why they view even pork belly with trepidation since the farms are designed to extract as much biomass as possible out of GMO monster crops instead of producing something that's naturally appealing to our senses. So the cuts that actually have flavor are viewed as daring extreme gross-out novelty exhibitions for "ethnics" and "hipsters" only.
