It depends on the length of flights as to the kind of service you'll get. I nearly always have to connect since I don't live at a major hub for any carrier, and sometimes have to take 2 connecting flights. If it's on a regional jet they'll offer soft drinks complimentary(and booze for a fee), unless there's projected to be turbulence for most of the ~60 minute flights. In that case, no service at all. Which I usually don't mind. All the shuffling around, shit heads going to the bathroom, and commotion for an hour long flight is stupid.

The only time you get "free" alcohol on airlines when you fly in a better class than economy. The alcohol isn't really free, you're paying for it in the cost of the ticket.

I always fly first class domestic and usually fly business class when I fly internationally. I flew to Mumbai from Chicago (with a stop in Dubai, yuck!) last year on Emirates in business class. Emirates has a solid business class, and the drinks are good. You can get all the pours of Moet & Chandon Imperial Brut champagne you want. I believe first class on Emirates gets Dom Perignon. The price difference between first class and business class on international flights isn't worth it to me. Business class gets you a bigger seat, more legroom, and a seat that reclines to lay flat on a lot of international flights. The difference between economy and business class is huge. The difference between first class and business class isn't nearly as big.

Part of the price is also probably so they don't have to bring as much weight onto the plane and save money. If your handing out free snacks and free drinks on planes everyone is probably going to take one even if they don't eat it right there and that small weight will add up, but if they charge $5 for one small and light snack then they don't have to pack as many because not as many people will be buying it and in the long run probably save them fuel and money.
