Brewing roasted chicory gives you a nice strong coffee-alternative. Brewing roasted barley gives you a lighter-looking but much more flavourful barley tea (pictured).
You can roast pretty much anything in a pan until its nice and toasted, grind it up fine with a coffee grinder, then brew it like you would with your coffee grounds. It'll usually be lighter and have a different flavour compared to coffee, and rarely you might accidentally make mustard gas.
