Tell me your best lentils salad recipe, /ck/

Lentils, tomato paste (1 or 2 spoons), salt & pepper to taste, white/golden onions, fresh rosemary, EVOO and (optional) cubed bacon.

>add EVOO to a pot and gently heat it then add the chopped onions and let them go until softened
>rehydrate the lentils or just use parboiled canned ones, add them to a pot with the tomato paste, salt and pepper
>cover everything with water and bring it to a boil
>when the water is boiling turn the heat down to the minimum level and throw your rosemary inside
>almost completely cover with a lid but leave a little space and let everything simmer until the water has evaporated to your preferred level
>cook bacon cubes until crispy and reserve
>pour some of the melted fat in the pot with the lentils (don’t exaggerate fat fucks)
>before serving throw the crispy bacon in the pot with the lentils and mix OR just lay it at the top of the lentils when plating
