Get hot pan, add quick spray of nonstick/~1 tsp of oil, throw hash into pan, spread it out, dont fucking touch it until crust forms, flip, dont touch it until crust forms again, thats it. Like most other things you try to crisp/sear, if you keep agitating it, you never let the crust form and it will be more prone to sticking or never form a good crust. Once it's browned up, though, it will essentially release itself, or at the least, make it easier to release.

I know this shit is basically dog-food tier, but fuck if it doesn't taste good when crisped up.

Med-high, it should be sizzling a little bit, some mild smoke. Too high and you risk burning before rendering the fat(which allows for a more even crisp). Too low and you're gonna be stuck there for 30 minutes/get major stickage.

Also, the canned shit is greasy as fuck too, it's just emulsified more than the real shit. To really crisp it up, you basically render out the fat so that it fries itself.
