So I raise 5 Pekin ducks ( was 6) 4 hens and 1 drake. The females are eggs laying machines, 4 every single day. Me and my wife eat them as much as possible, and we give them away to friends, family, and our garbage man. Problem is we can’t give them away fast enough. I have like 14 dozen in my fridge right now and am running out of ideas on how to eat them. I’ve done fried, omlettes, quiches, boiled ( takes exactly 47 years to peel each one), in baked goods, and homemade mayo. Any other ideas? And preemptively, no I won’t shove them up my ass. They taste incredibly similar to chicken eggs, but they are like double the size, richer, the yolks are a natural color as opposed to store bought yellow yolks, and they make better omelettes. It was 34 pounds. He doesn’t use any fillers or antibiotics in their feed, and they all have separate large areas to free range. If you look up “ roes orchard” he’s near there. The orchard owners let him use their land, in exchange we kill the deer and coyotes under their nuisance permit

Lots of shit is wrong with it. Turned in foot so it can't walk right and it appears to have neurological issues and can't make much noise. It's also runty and developmentally retarded. Sways a bit and opens its mouth as if to make noise. It's just all messed up genetically. It's in a quarantine pool so I can feed it properly which has been helping it since it just couldn't compete with the other ducks for food (and the other ducks were bullying it). But I think as it gets bigger that turned in foot will just cause more suffering. We plan on slaughtering it in a couple weeks or less.

I know none of my ducks have bumblefoot, whenever I handle them I check. When they were in the brooder they had early signs of it so I used topical spray and that went away quick, especially once they were put on pasture.

I plan to eat the duck feet so I want them perfect.

The rest of the ducks are perfect, no bumble foot, no angel wing, beautiful, well developing plumage and great energy.

This proved an issue for us as well for some time.

Egg heavy dishes:
Pavlova/ meramgues. Because you have more eggs yours can be bigger, really it's just sugar and egg but they are easier to give away/
Creme brule, also expensive because of the number of yolks used.
The two go together.

Other dishes are pancakes, omlettes, and just fried eggs- if you do this every morning you will go through most of them.
Nothing like a poached duck egg on toast.

On storing eggs:
Because you got your eggs fresh and haven't pressure washed or "decontaminated" your eggs you can store them for a month if not longer.

Mins were surprisingly easy in the winter ( upstate NY where it gets frigid) I gave them a little extra hay and some cabbage and that was it. They have an enclosed run they can go in day or night, and during the day they free range. They actually seemed to love the snow. You should incidentally never feed chickens egg shell because they start pecking their own eggs.
I find the best way is to just save the shells for ages and they dry themselves, then powder them with some stock feed.
When the paste dries they will gobble it down.

Our chicken eggs have shells so hard that you can break a douzen supermarket ones with them, the whites are very hard to beat and you can remove the shell and leave the intact egg in it's skin

I’ve owned and fostered several. One that I fostered snapped my thumb because I got in the way of him attacking our puppy. He was also a rescue “extreme bully” pit that was trained as a fight dog from the Bronx. Our current pet is a sweetheart. She is super protective over anyone we let in the house. I've had a lot of dogs over the years, including a few of the ones that have that particular stigma attached to them.
I would not leave any dog alone with a 2-year old.
I know it's a cliché, but a lot of it really is about the owner.
Some dog breeds have more of a temper or free spirit or pure aggression than others, yes, but you can still raise them to be be good girls and boys if you know how. Sadly, a lot of the people who buy the bully breeds do not know how.
They coddle the dogs and treat them like innocent little babies. Never teaching them any discipline. Of course the dogs think they own the damn house, and of course they think they can maul whatever they want.
And since they have never been exposed to any kind of punishment they don't know how to react to surprises or negative experiences.
A properly raised dog will not flip his shit because someone has a lough laugh or there's a gunshot sound on the TV or whatever. He'll look at the owner to see how he's handling it and if the owner is relaxed he will be relaxed too.

Sadly, a lot of the people arguing that "it's the owner, not the dog" make the same retarded mistakes themselves because they never bothered sitting down and reading a book about how to deal with the potentially lethal live animal they just bought. They probably assume that the dogs that "just snapped one day" were abused when it's very often the opposite, sort of; they were babied too much.

One time I was walking the big one she got too close to one of those electric fences they use to keep in the cattle, and a second before she put her nose on it I yelled "no!" to save her from the zap.
But I didn't save her from it. She got zapped and now thought I had made it happen because it came at the same time as me yelling.
Walked around with her tail between her legs looking at me like she'd do anything for my forgiveness for the rest of the day.
Fucking heartbreaking.

She got over it when it came to me, but she never wanted to go to that spot again when we were walking.

We've had a lot of dogs over the years and they were all lovely, but that one really stands out as a paragon of goofy kindness.

As much as I would love a dog someday, I can't keep another ornamental pet. My mouse is enough.
The plan with a dog would be to get a livestock guardian like a great Pyrenees. Get one from working stock as a puppy and train it carefully and intensively.

Dogs love to be outside and have jobs. That's why dogs that are the size of bunny rabbits are so anxious, and dogs bred to kill are so... bred to kill.

Having said that, I'd probably only use a Pyrenees if a guard goose doesn't work for whatever reason.

Dogs can be fucking awful to livestock.

Working stock dogs are fucking expensive, we often inherit farm dogs (mostly collies) from farmers who pass away and they herd our chickens and ducks around the yard out of habit.
Farmers breed sheepdogs but we also get scumbags who puppy farm in urban properties because of the pricetag of purebreds.

Tibetan sentry dogs are amazing because all they do is climb things and watch things...all goddamn day.
If you put a box in a field they will immediately go stand on it, they climb trees, they get on house roofs, water tanks.
Once I saw someone put a ladder on the bus stop so the dogs could stand on top of it and watch while people waited for the bus

I don't know much about dogs but most mountain regions have a special dog to guard alpine grazing herds, their range is in kilometers so they will drive you out for miles.
If rural farmers illegally graze on national parks or hiking areas it's a common threat to hikers.
And unlike a stray bear or wild dog that's stealing some other hikers trash you can't just mace or shoot a farmers dog and there's never just one of them.
The farmers are generally of the opinion that you are intruding on their traditional grazing land; not that they are illegally grazing which doesn't help the situation.
The farmer is more likely to hurt you than their dogs

About the stoves?
Like a Canadian stove they have an opening at both ends so you can just run whole logs into it, they also handle the spiting exploding pine very well. It means you can just saw lengths and stack them.
The long exposed chimney gives off a lot of heat if you have a low ceiling as these houses do.

People up there eat a lot of hard vegetables which they sometimes earth to store, sometimes dry, sometimes just leave in the open because it's freezing and there's no humidity.
Usually they trade preserved meat and dairy with mid-mountain folk in exchange for rice, wheat, noodles and liquor.
If you go far enough you find people storing butter in leather sacks and making super hard dried cheese and sausages.

You still get true /out/ folk who live so far out they are scared to come into the towns because the government is trying to flush out nomadic herders and hunters -some even winter in the high pastures doing nothing I imagine but sitting in a dugout eating potatoes and dried meat. Twice I came across them and they were very jumpy- their hostility only tempered by hunger and the interest in modern gear.
While loath to part with my gear a Parthan shepherd is currently sporting some of my socks and flint and steel and I am still sporting my head.

Trust me, I would love a collie. Border collies are my favorite breed of dog, but I need a guardian, not a shepherd.
The reason I would get a Pyrenees is due to their reputation of being relatively chill dogs who, when properly bred and trained, will not harm your livestock.

Border collies seem to have a better reputation than say, an Australian cattle dog, but their high energy and prey drive could put my small livestock at risk. They are also kept in a paddock so herding isn't necessary. And from what I hear they are shit livestock guardians.

The albumens can be frozen as-is, but the yolks must be treated with salt or sugar before freezing.
How are pickled duck eggs? Have you tried that? Of course, that'd require that you boil and peel then. By the way, besides the thickness of the shell, another reason you're having difficulty peeling them is due to freshness. Older eggs are easier to peel, but duck eggs, even ones sold in supermarkets, tend to be fresher than chicken or quail eggs so they're notoriously difficult to peel after boiling. I can only imagine how difficult they'd be fresh out of the duck herself.
Another option is duck egg noodles. You use the yolk alone, not the albumens which (as previously stated) can be easily frozen. Once you make them, you can boil them briefly then drain and dry. The boiling is to reduce the likelihood of spoilage during drying but is not strictly necessary. Anyway, once dried, you can store your duck egg noodles for months or perhaps even years.
Have you tried making curd or kaya from duck eggs?
Oh, and egg curry is a favourite of my family but once again, this requires boiling and peeling. We usually do it with chicken (occasionally quail). While I haven't had it, I'm sure duck would be good, too. Make a basic coconut curry base (blitz coconut cream with shallot, garlic, ginger, red chillies and other aromatics until smooth) and cook it until it breaks. Add powdered spices (paprika, turmeric, cumin, coriander seed, white pepper, dried zest etc) and stir until well combined. Fill with stock then add peeled eggs. Simmer until reduced. Serve with rice or rice cakes.

The campbells are an egg breed where as pekins are dual purpose/meat birds. I originally got ducks primarily for eggs but I also want to eat a few so I got the pekins, which get MASSIVE. I'd also like to experiment with cross breeding the two. Here is a more recent pic of them.
