Real soy sauce. Not kidding, most soy sauces you find at the grocery store are cut with wheat or worse. Look at the ingredients, there should be nothing in it but soy, water and salt.

use a bit of soy sauce, i'm not a fan either. add mirin/ rice wine vin and sugar. some scallions.

also alternatively try Hoisin sauce or Oyser sauce

Most commercial offbrands use caramel color and other nonsense to make it cheap. Stick to kikkoman, or use san-J brand Tamari, low sodium.
You don't need much, but combine some in a small dish and make sure you add chili paste and ginger paste to make it taste good. Get your veggies good and browned too (and ensure some mushrooms if you are tapering back on the soy. If you have mirin, sherry, or vermouth, a tiny tsp to deglaze, then replenish any oil if needed, and smash on and over all, cold rice, pressing into an even layer. Pour over half your soy mixture and leave it to sizzle. Leave it. Then in a couple of minutes, start flipping to incorporate the veggies a bit more evenly, one more press down, rest of the sauce. Wait. Break your egg into a cleared out corner. Chop with spatula while it sets, hit it with some green onion now, maybe some parsley or cilantro.

Every now and then, I add curry powder to my soy mixture, just to curry-ize it when I'm doing one that isn't ham or pork, but rather chicken.
