They come out just like pic related they are called camarão-seco (dry shrimp in english). You can eat them like that or use them in others recipes.

Usually in Thai food. Fresh prawns in a good curry or Tom Yum soup - awesome. Also marinated and grilled. Easy to overcook though.

one place near me sells them by the pound and you'll just get a styrofoam container of whole crawdads. I've sat across the table from friends so many times watching them pull them apart and slurping the meat out of the back of the heads. it's always pretty unappealing to me. the one place I liked most closed down 2 years ago. it was a fish market attached to a restaurant and they were family owned. they had a shack like store and there was an old fishing boat leaning up against it and dining tables outside around it with netting overhead. it was a fun venue in the middle of nowhere that was near a factory and I learned about it from factory workers when I worked there. was nice while it lasted. I really hate the more commercialized cajun stuff. always too expensive and I'm in north AL so it's a few hours from the coast.
