I think the real reason is that people are accommodated to eating shrimp nowadays, and many people probably didn’t know how to prepare it properly back then. As I said before, crab is generally more preferred than lobster, it’s just harder to access and in many cases it’s prepared where it’s a minority ingredient akin to lobster.
