I mainly make meads and it's pretty much all wild ferment from a strain I started two years ago. My recipes are "add water to my honey until it is as sweet as juice, then pour onto lees of last batch". Tho, I did do a tutti frutti thing that was pretty good

I used a mix of molasses and dark corn syrup for the first batch's sugar content at a ratio of 3pts dark corn syrup to 1 pt molasses, and those two came out zangy and smoky with a nice crispness but exactly zero carbonation

Next batch I used 3pts dcs to 1 pt molasses to 1pt black pepper syrup and that shit SLAPPED. Smoky and spicy, with a zangy edge that mellowed into the rich darkness of the tea. Brew was also black as night.

My current and best so far is: rice vinegar, soy sauce, sesame oil, ssalyeot, chili pepper flakes, scallion, and toasted sesame seeds. I think the sugar or honey is probably a good idea, I'll pick up a small bottle of ssalyeot if I see one though, I do like experimenting. I feel ya on the extra effort due to no work though. I set myself a couple of cooking challenges during quarantine. I practiced a lot of baking and I also had a weeb week where I cooked a Japanese thing every day. Trying to expand my culinary horizons, ya know? Was lucky enough that when covid hit hard my country stopped exporting and selling good quality tuna to restaurants so I got some really nice tuna to experiment with too.

Beef curry.

Fried onion, garlic, ginger and chilli in butter, then added garam masala, ground cumin and coriander, cardamom, chilli powder, cinnamon and fried until nice and fragrant. Then I added some rump steak I had seared and diced, seasoned and gave a good stir and fried for a minute or two to coat in the spices then added tomato paste, cream and half a cup of beef stock.

Currently baking a Shepherds Pie. Put some mint sauce and butter in the potatoes before mashing them.

Just made the herb stuffed tomatoes from the Tasting History youtube channel. Easy and tasted fresh.
