Trying to find use for it but almost every recipe calls for either beef or pork.

Depends what the mix is. If it's 50/50 beef/pork it's perfect for bolognese. If it's anything else, just make burgers or meatballs or something.

finely chop or grate or mortar and pestle or whatever a bunch of aromatics like spring onion, ginger, garlic, chilli, fresh turmeric etc

saute them with your mince
then add seasonings like soy sauce, rice wine, sugar, vinegar, fish sauce. taste it and balance it
add a cornstarch slurry if you like

serve on rice with a fried egg on top

Mixed as long as we are talking about equal parts probably works really good in most recipes you´ve read where it says either beef or pork.

Just beef tends to get a bit dry due to the low fat content (as long as we´re talking regular 90/10 minced meat and not minced chuck roll or whatever as that more or less changes the whole premise) and just pork is just too fatty for some things and often gets a more mushy texture so a mix works good in a lot of cases take meatballs and bolognese for example they work wonders with a mix instead of say just beef it´s simply hard to fail with it as the meat won´t need too much attention as it won´t dry out either way and of course there is also a change in taste mostly that the extra fat will help lift out other flavors.

I don't really use minced meat unless I'm shaping it into something else like a burger or meatballs. If I'm making something like chili I would much rather just buy a piece of meat and cut it up myself.

I don't mean to belittle your conundrum here, but it's just ground meat. You can use it for anything that calls for ground beef, lamb, pork, chicken, etc. or any combination thereof, and it's gonna be fine. It might not be traditional, it might not be ideal, but it's gonna be fine. I wouldn't lose sleep over it
