I skip a lot of days, but its a good way to start your day if you have time. Its nice when I go into work and I'm able to bring in a decent breakfast because I can take a good 30 minutes to slowly eat my meal while getting situated for the day, catching up on emails, check up on what I need to do, etc.
The food is a good way of breaking things up and adding a little extra spice and happiness to the start of the day.

plus if I skip dinner the day before I'm just fucking starving and want food.

Most common is a fried egg and cream cheese sandwich, because easy. Gooey yolks, maybe some sliced meat in there.

Best favorite breakfast is something involving crispy hash browns. I'm flexible on some of the other details, but let's say T-bone steak and eggs, medium/over easy, hashbrowns, crispy/all the way, wheat toast if you're WH, or something vaguely in line elsewhere.

Really just depends on my mood. Was way more consistent on breakfast meals with my ex (Dutch Baby Pancakes were our favorite), but now I mix it up.

Crepes, one with a savory filling and another with sweet.
Cucumber salad with pickled vegetables.
Biscuit or english muffin sandwich.
French scrambled eggs with rice, usually pilaf.
Shakshuka, with leftovers for lunch. Works very well with diner style hashbrowns.
Breakfast tacos if I have some corn tortillas handy.
Sometimes just some fruit or an avocado.

Picking a favorite breakfast meal is like picking your favorite child (sure, you have one, but doesn't make choosing just one easy).
Chorizo tacos with fried potatoes, cheese, and egg (either scrambled or thrown on top of the meat and potatoes in the oven so you get that neat baked sunny side up egg), avocado optional.
If I don't have a lot of time, even frying a couple slices of bacon with an egg then throwing it on top of a piece of toast (cheese/avocado optional) is pretty fast to make and eat.
I'm also partial to making BIG ASS pancakes/bacon pancakes, then having some fruit cut up to eat with it or on the side, then top it off with some syrup (sometimes also nutella).
Of course if I'm really in a hurry or not hungry, black coffee with either honey or avocado toast, or a quick smoothie is always good.
