Butter and toast one side of thicc white bread, put the cheese on the toasted side (I use smoked cheddar, chipotle Gouda, and a good American) and start cooking the sandwich on the untoasted side. Plenty of butter in the pan and have something to weigh the sandwich down a bit (a pot does the job for me). Low and slow. Keep checking if one side is done, then flip. If there’s any areas that don’t have butter, add it. If you’re using unsalted butter, it may be a good idea to add a pinch of salt to the surface of the toast.
