According to my supervisor at my old meat processing factory, brazilian meat is shit because they can only breed certains cattles in that climate and cow diseased infested place. So brazilians created ways to breakdown the tough meat by slowly cooking ontop of charcoal and slicing off the tender cooked bits like Churasco.

Man, I miss eating that at lunchtime. I live in the US now and it's a world of difference between being able to walk to any nearby restaurant and get a meal like that during my lunch break, and having to settle for sandwiches most of the time.

Yup! It's a particular type of Brazilian meal, it's a "commercial" meal/"made meal", so to speak. A parallel would be a blue plate special. You can get a meal like that (maybe change it for fish fillet, chicken breast or thigh, and maybe a fried egg added for anyone of those) at any restaurant in Brazil around noon. Naturally, it won't be that much, it'll be a portion for one person. Fries are pretty common in Brazil, Brazilians do like steak and fries pretty often.

You panfry the steaks with a bit of salt and pepper, then add the slices of onion and stir. The onions kind of caramelized but they get plenty of the flavor from the meat. Probably seasoned wih parsley or cilantro in that case.

I live in the border with Argentina, in the Brazilian side. Beef used to be crazily cheap there, as I remember going to their butcher shops with my dad. Haven't done that for years, as we can no longer bring meat across the border after some cow disease. We get tons of Argentinians coming here to buy all kinds of other stuff, though. At least before the borders were closed due to covid. Too bad because I want to go to Buenos Aires.

The cubans at the end to finish the dish, will hit the pan with a bit of vinegar, sour orange or lime, or wine, deglaze it, adds that the tartness, and it marinates those onions.
