My dad would heat up a drizzle of oil into a pan, crack enough eggs into it to fill it up, fill the lid of the pan with a little bit of water and pour it around the edges before putting the lid on and killing the heat. The whites were always perfect and the yolks on toast were the prize of the meal. Loves me some eggs.
