They could've been in legal trouble for price gouging if they hiked up the price then, that's why places had limits on how much stuff you could buy at once to artificially limit demand instead of just upping the price. Now that it's calmed down they can actually raise it to the equilibrium price.

The processing plants are/were shut down and the ones opening back up are running at like half capacity because of bullshit social distancing rules. As long as this shit is going on there will be reduced output. Plus restaurants that are opening back up scoop up most of the beef supply making grocery store beef jacked up.
