cottage potatoes. easiest thing in the world, but I did watch his video on it once and adopted his technique, so I give him credit. they turn out better his way, which is on parchment paper and not on a bare pan or foil. my baking has gotten so much better since I started using parchment paper, and also using wire racks to sometimes cook over the pan instead of on it.

I did. Was one of the first bread recipe I ever tried, and I picked wrong cheeses I think. The final cheese blend ended up super grainy and foul. Barely ate a quarter of it.

I've never tried Chef John's recipe, but my mom's side of my family is Georgian and she always used a 75/25 blend of low moisture mozzarella and either goat cheese (feta works) or farmers cheese to get pretty close to the cheese used in authentic khachapuri.

I'm surprised he doesn't use mozzarella, as most recipes that try to emulate authentic khachapuri have that in common. I'll have to try his version and see what I think about it.

I've had this bookmarked for a few months now. I can't wait to make it. I've watched a lot of CJ's vids but my all time favorite thing that I've made is the beef goulash.
