Mashed potatoes aren't really worth the time and effort. But if you are going to make them, seriously roast them first, not completely like you would if you were going to eat them roasted, but enough to get most of the water out. Then mash them with a ricer. Mix in lots of salt and butter, more than you think should be legal. Boom.

Be careful you are starting with potatoes that are diced too small. Keep it even in size, but go larger in chunks than you did this time. Do not rapid boil, but kind of a barely simmering boil on medium once you get them hot enough. Lid on.
Check them with a fork and stop the moment you know they are done, so they don't get waterlogged overcooking.
You can use a strainer to drain them if you are paranoid about extra water or don't think you can hold such a big pot with a potholder, lid on. But, to keep them as hot as possible, I drain them from the pot, just tipping out the water over the sink, holding the lid on and slightly offset, and I return the potatoes in the pot right back to the same hot burner, where the remaining water and steam kind of nearly instantly finishes evaporating, in about a minute (or so?).
Meanwhile drop in some pats of butter to get softened and melty too. I might put the lid on if I need to wait another minute before mashing.
Many people heat their milk and butter and add it hot to their mashed potatoes. I don't. I use half n half or cream, and it's cold from fridge. I'm going to use whatever dairy I have on hand for my coffee that week and it's never skim! Forget skim, it's basically water. Get the masher out, give it a couple splashes of milk to get started, then mash all over, stir once or twice and eyeball if you want more dairy, splash again. That's how it goes. You don't overmix, and you don't know how much you'll end up using til you eyeball it.
For big family meals, ie holidays, I'll use my hand mixer to whip them in the pot (which you would think overmixes them, but it's fast). At that perfectly seasoned and whipped point you can keep potatoes warm in a dish in the oven.
