I had no idea vegan parents were this bad at feeding children.
Here's my average kids meal plan
basic breakfast:
eggs plus a soaked WHOLE grain (oatmeal, pancakes, muffins, bread)
add homemade turkey sausage for more protein. add butter to the grains, sweeten the grains with raw honey/maple syrup/rapadura
lunch:
sandwiches, soaked grain whole wheat bread
filling: roast beef, chicken salad, egg salad, tuna salad (use homemmade mayo with evoo or sunflower/avocado oil)
Add veggie toppings for crunch/flavor. Avocado is good with kids because they like the fat.
Serve with fruit, make multiple sandwiches if they need more food
drink: raw milk or a homemmade fermented pineapple drink

dinner:
any whole protein(chicken, ground beef, steak, fish etc..)
carb(soaked brown rice or potatoes)
veggies

dessert:
homemmade ice cream with egg yolk and honey instead of sugar
or gelatin, homemade using no sugar added juice with beef gelatin added.

this is bare bones daily nutrition for any kid or adult really, variety will help make sure you achieve your weekly nutrient goals

Soaking grains makes them easier to disgest and makes the B and E vitamins in grains more bioavaible. I never could eat oatmeal because it tore up my stomach, but once I started soaking it that problem went away. It activates the nutrients and deactivates the anti nutrients and makes the taste so much better, grains don't have that stale "box" flavor that I notice sometimes.
Best fat for a vegan kid would be cold pressed extra virgin olive oil and avocados, vegetarians don't have to eat dairy protein, but they should use clarified butter in all their meals if they have issues with the milk proteins. they should add butter to their breakfast lunch and dinner ideally if they don't mind milk proteins. From what I've read about Swiss diets, the people ate mostly vegetarian, consuming sourdough bread with cheese and butter and fermented vegetables, along with fresh milk, occasionally they would have pickled fish with lunch and even more occasionally would they eat cooked meat, since killing animals is a big deal in small agrarian communities it was something they did, but not too often and without purpose. Their diet was able to produce string displays of womanhood and manhood according to researchers and explorers in the region.
If you are vegetarian, I would say eat meat like a whole free range chicken or grass fed steaks, every 3 months, just to make sure you're getting all your vitamins and minerals (make a meal and share it with non vegetarian friends). That way you can still be vegetarian most days out of the year.
I wouldn't reccomend the diet, and would reccomend a pescatarian diet instead rich in a large variety of seafood to prevent overcomesumptions of any toxins modern fish.

Okay, that's unfair, I can grep journals on my own, and the general consensus appears to be that the levels of anti-nutrients are such that a normal diet would be nutritionally complete regardless of their limited presence in grains. I can't find any studies determining how much micronutrition is lost as a result of naturally occurring antinutrients in a normal diet; the studies are all looking at whether the presence of them renders a diet deficient (to which the answer appears to be 'no') with none of them being broad or detailed enough to look at specific differences in levels of nutrient uptake overall.

One of the few studies I found looking at reduction in the level of an antinutrient and its effect on nutrient uptake (specifically phytic acid in brown rice, since I want to challenge you specifically) goes through a fairly complete process of reducing phytic acid which is very effective (96% effective in fact). It first notes that an acidic soak is not very effective for brown rice on its own due to low phytase activity, and proposes a simple procedure for improving this, which you should absolutely check out if you do intend to keep soaking your rice (You may even want to adapt it to other grains if you're so inclined). Unfortunately, the conclusion of the study is that the availability of the nutrient in question (dietary zinc) is not statistically significantly improved by the process. They do note that further studies would be needed to address other nutrients and the possibility that another anti-nutrient is responsible for forming complexes that prevent their procedure from increasing availability

I don't think I've got any deficiencies and I even take a multivitamin/minerals cause work gets them for free. I have my own garden that I am expanding all the time, in 2 months I started and developed 6+ garden bets with fruits, tubers, squash, leafy greens, legumes, seeds, and even grains (may also start a rice paddy) All grown without pesticides or chemical fertilizers, and no till (although i did dig swails around my raised beds). I also have 25 hazelnut saplings and an wild black walnut sapling started, will also be growing a variety of stone fruit and other fruits like apples and pears.
I am also raising my own livestock, have started with a few dozen ducks, plan to use them for eggs, fertilizer, land management, and meat. In the meantime I have a neighbor who raises her birds in a fashion close to how I plan to (outdoors with as much supplemental forage as possible, although she doesn't keep them penned and I will be having them on daily rotating pasture using mobile infrastructure)
Have plans for dairy animals, probably a carefully selected Jersey cow, for their high butterfat content and gentle personalities. It also doesn't hurt that they are cute as heck. And I will also be raising meat animals like rabbits and potentially sheep or goats, preferably the latter. I will use as little feed as possible, as animals fed their natural diet make better manure for the soil.

Nutrition will be optimal for my child. And YES, I live in a flyover state.

I would be surprised if my child ended up as a vegan. They will spend so much time helping me take care of my livestock and garden they will realize that the animals don't just give their lives for nothing, it's a trade for the humans providing optimal care that nature cannot provide and a quick and painless death (plus most of my slaughters will be my weak animals not suitable for breeding) in exchange for their mortal flesh to provide for me during my short stay in this mortal realm.

Currently I soak my oats in water in a cloth covered jar for a minimum 7 days. Idk why but I just like how everything develops and breaks down. I would reccomend no less than 3 days.
Biscuit recipe is :
-360 g flour of your choice (Im using cheap fortified white all purpose flour right now but I'm sure blanched almond flour or rye or heritage wheat flour would be good)
-12 g baking powder (you probably could sub for baking soda)
-3g salt
-60g sugar/granulated sweetener of choice, I would recommend 100% eurythrotol or a baking sweetener like swerve. Though i suppose the sweetener could be optional.
Mix dry ingredients then add
-90 g cold butter from the fridge. I like to cut them into little cubes before I put them in the mix
Then I break down the butter until they are all pea sized. I use my hand but maybe a biscuit cutter would work. Hands always work best for me, lol
-240 g of the aged and cooked fermeted oats.
-100 g whole milk
Fold and press dry and wet ingredients together until combined. Lay 1 inch thick on surface and cut with a biscuit cutter or a jar.
Place on greased pyrex pan or cast iron skillet, bake in oven for 12-15 minutes.
Allow to cool 5-10 minutes before eating

I change the water for legumes like beans. I keep the rice water because I have been curious about hair treatments with fermented rice water. This was white rice so it was harder to break so maybe thats why it doesn't stink. I wonder if brown rice would make for a better hair treatment.

I do not change the water for the oats. I like the sour cheese smell.

You don’t “activate” nutrients by soaking and you don’t “deactivate” nutrients by soaking. Nutrients are active unless you denature them by chemical means or heat. You don’t know what bioavailability means either. Bioavailability has to do with what is left after your body processes them after the first pass, which is really more related to drug metabolism then foods

Children by instinct do not eat most vegetables. It's the type of survival instinct in children that was selected for in nature for a reason but somehow doctors from 80yrs ago decided that the children are wrong, they should eat their veggies no matter.

For what reason? Look up the actual absorbable micronutrients of your favorite vegetables and compare it to dairy, organ meats or whatnot (things children will instinctively eat if fed) and you'll find them lacking. This is of course ignoring whatever anti-nutrients there might be in them and which some are allergic to.
