Whats the secret to a good scramble egg? Mine always look sad and I can never get them fluffy like iHop.

I should probably add what I do.

1. Scramble 2 or 3 eggs in a bowl. Do not add anything else.
2. Cook in virgin olive oil
3. Add salt and cheese the moment the egg hit the pans
4. Flip after 30 seconds, leave it for another 30 seconds then take it off

What am I doing wrong here? Why aren't they fluffy?

You crack the eggs into a bowl and season to your liking or put some greens/browns in it. That mixture you poor into the pan and very gently stir (more like distribute very slowly) so that everything comes into contact with the heat once. Egg will cook rapidly once you introduce heat and will keep cooking once you take the heat off.

In other words, what you are trying to achieve is to put enough heat into your eggs so that they can cook to your desired firmness. If you take the pan of the stove when you think they are perfectly done, they are overdone.

Add millk to eggs. That's what buffets and restaurants often do to make their eggs go further. Put in 1/4 cup of milk and stir in with eggs. You might be able to do more milk but I don't normally eat that shit, but have had it made for me so I would start out with that and you'll notice the difference in the eggs.

Mix them why they cook, like if you’re making an omelette

Don’t go super high heat, medium or medium low.

Once it stops filling the entire pan with yoke, stop the heat, give it like 20 secs then take off heat

best scrambled eggs are the easiest to make
tblsp - 2 of butter in a med-high pan, crack eggs in and literally just let them sit and cook for a couple minutes until the whites are almost set, then fold them over each other while breaking the yolk a bit. Take them out after less than 5 minutes of total cooking time, you should be able to tell when they're done.

a large knob of butter and low heat for 10-15 minutes. gently scrape and collect curd until mo more liquid egg remains. they should be slightly wet when you pull them off the heat.
