how do you make an actual gourmet burger?

Good meat, good bun, and good cheese. Burgers aren't really a technical food - you either grill them correctly or not, so it's all in the ingredients. And overloading a burger takes away from what should be the centerpiece, i.e. the patty. Keep it simple.

I got a hipster burger at kona brewery in hawaii and i would have way rather had a basic ass cheeseburger from any fastfood restaurant. The patty was so thick and the bun got soggy immediately. 17.95 later i was pissed

to quote that fat burger chink or whoever the fuck said it:

"if you can make a good burger with just meat bun and cheese. you know you are a good cook." after a mere 12 seconds of pondering i remembered that it wasnt that fat fuck who said that its the beef rancher from the modern rogue who did the burg vids

Bet you're one of those guys with a shitty tongue that gets overwhelmed and can't taste anything if a steak has anything on it besides salt and pepper with no sauce

Burgers were always food for the out-and-about. It's impossible to make a gourmet burger without removing the soul. The platonic ideal of "the burger" is necessarily nothing special.
So basically, you cant. High quality ingredients can be used, but must be hidden from the minds eye. If you do this, your burger will taste it's best and remain philosophically consistent, which is what we all ACTUALLY want.

Well, I guess the places you went to were quite shitty when it comes to burgers.
I have multiple good restaurants that serve damn tasty gourmet burgers around.

Dont get me wrong, they obviously cost more and fast food joints are tasty too, but I go to for a gourmet burger when I want that "extra 3 inches" of taste.

Must be some good fucking burgers if you wont even say anything about them. Almost makes one think that you know that these "gourmet burgers" are not really that good.

Best comment in thread.

I personally have enjoyed a few weird things like goat cheese. I'll also take spinach over lettuce. If I'm making it myself I like to mince some garlic and onion into my beef, and season with good salt, not shit salt, and fresh ground pepper.

But other than that, the most important thing is use quality ingredients, and don't over do it.
