I used a bread dough recipe that was supposedly foolproof, for bread it wasn't as good as from a bakery but it was okay for a first try. I used all purpose instead of bread flour because the stores are out of bread flour. I had a lot of dough left so I smeared it with oil and put it in the fridge a few days in a Pyrex container.

I took the dough out of the fridge and preheated the oven to 500°F. I poured some olive oil into my 10 1/4 inch cast iron pan. Most recipes online for a cast iron pizza call for a 12 inch pan but I only have this one. I put the oiled pan in the oven.

I cut off half the remaining dough because that seemed like a good amount. I stretched it out using some extra flour, making sure to stretch the outside too.

I took out the pan and it wasn't that hot yet so I turned a stove burner to low just so it would keep warming up. I made sure the pan was well coated in oil and put the dough in. Then I smeared a thin layer of marinara sauce from a jar all over it, to the edges. I added oregano, a little red pepper flakes, and then haphazardly added mozzarella pearls and pepperoni.

I baked it on the bottom rack for about 12 minutes. The oil bubbled up and could be seen and heard frying the crust. Finally I removed the pan from the oven and let it sit out and continue bubbling for a few minutes. Then I moved the pizza to my cutting board and cut it into four pieces. It was very good.

yeast will chew the starch out and leave more gluten in dough, making it well, glutenous
if you add sugar, the tinny buggers will just eat the sugar an leave you carbonated gruel instead of dough
