iirc, for the first year they were restricted to just brewing their blonde. But even among trappist ales, theirs are pretty unusual. Their quadrupel doesn't use any of the usual spices and instead achieves the effect with just malts. On top of the stout, which is fantastic, their IPA (the only trappist IPA produced as far as I know) is really balanced and their christmas ale is decadent.

Germanfag here, I am curious about all that IPA stuff. (What does that even mean?) Are there any rules that these breweries have to follow or are literally all the ingredients allowed to make beer? I'm not gonna bitch about muh Reinheitsgebot, but using flashy labels and funny names for beer gives me a feeling of pretentiousness, both in regards to the brewer as well as to the customer, who buys that stuff. Why not just use water, hop and barley (and some yeast for that matter) and call it a day?

IPA = India Pale Ale
In its simplest definition it's just a pale ale with a strong aromatic flavour from the large amount of hops used in the brewing process. American IPAs typically use hops like Cascade, Centennial, Chinook and Citra, but many others too, which all have different aromatics ranging from piney and herbal to tropical and floral. Obviously there is a huge variety of flavours that can arise from hops alone, so it's a far broader category than it used to be.

I'm guessing as a boilerplate Germanfag all you really have heard of is pilsner-style lagers like Veltins and Oettinger. These use traditional European malts and hops and are also cold fermented, so they all taste fairly similar with varying degrees of quality. Wheat beers are closer to the brewing process of IPAs in that they are top-fermented, but again, they use very specific hops, malts and yeast. The best way to understand what an IPA tastes like is just to try one really. Look in Getränkemärkte for imported American stuff like Sierra Nevada or Lagunitas for entry-level IPAs. Punk IPA is increasingly popular in Germany as I understand, and, although very bland by comparison, will give you a general idea of what an IPA tastes like.

Since the answer above didn't actually explain much about the name:
It's called an India Pale Ale because it was a Pale Ale meant for India.
When India was a British colony, the British brewed beer in Britain and shipped it to India.
Since hops are a good preservative, they added extra hops to the Pale Ales to make sure the beer didn't expire on their long journeys at sea to India.
Of course, more hops means more bitterness.
People came to enjoy the taste of these bitterer beers, so they started drinking these in Britain as well as in India.

The original IPA is fundamentally just a pale ale: malt, hops, yeast and water. But with more hops.
English IPAs tend to keep some maltiness for balance. Traditionally, they don't go overly crazy with hops.
American IPAs, which is what most people mean when they say IPA these days, and the ones that started the trend with the stupid names and flashy labels, add a fuckton more hops and don't really give a shit about balance. Adding more hops also means having a shitty Würze doesn't matter as much. The hops cover up off flavors with the bitterness and fruity/piney/etc hop aromas. This made it very attractive for many start-up craft brewers in America.
They got popular because this was the first time many Americans actually tasted a beer with flavor: their mainstream beers for most of the 20th century were flavorless lagers, nothing at all like a good Pils or Helles.

Anyway, the style has since been experimented with:
What if we use roasted malts instead of pale malts?
What if we put the hops in later in the process?
What if we add lactose?
There are no actual laws, only guidelines that brewers follow. Generally people still stick to just pale malt, yeast, water, fuckton of hops.

They are very popular now, so they're less hipster than they used to be. But I agree that the whole culture often feels pretty tacky, kitschy, tasteless. Alas, it's what the Americans chose and everyone else copied.

American beer shelves are very crowded and there's a lot of extremely young breweries who need to make very eye catching labels in order to stand out so you even notice their beer. It's not pretension, it's marketing. This is probably a lot less prevalent in Germany where most of your breweries are centuries old and are, for the most part, very well established brands.
