>blanch tomatos, remove skin
>heat olive oil to.medium heat
>sautee a quarter of an onion diced
>once onion is browning toss in 1tbsp minced garlic
>once garlic is just before browning and releasing aromas toss in your blanched tomatos
>lower heat and let simmer until thickness you want
>throw in 2 bay leaves for a few minutes before you pull it off and start salting sauce to taste
>then mash or blend sauce if you want it smoother
>dont forget to remove bay leaves before you process it
