I've personally had that problem and I've fucked up rice so many times and it sucks but my process is, cook a handful of frozen peas and carrots until soft and starting to crisp in oil on medium heat, transfer to bowl, do the same for eggs, transfer to bowl, wipe out pan, add a huge pat of butter 1tbsp for cup of day old, hand-declumped rice I guess? Turn up heat to the highest setting, and cook the rice until it takes on color 5-8 minutes, you'll know when, add everything back, add 3:2:1 Oyster Sauce:Soy Sauce:Semsame sauce for shitty chinese food flavor or 2:2:1 Fish sauce, Soy Sauce, Sesame Sauce for thai flavor, 2:1 soy sauce, sesame oil for basic fried rice.

Best way is to salt it and leave it uncovered on a wire rack in the fridge so air can circulate around and dry all sides of the meat.

Take carrots and squash cut to pieces of the same thickness and add to a pressure cooker with butter and water (not enough to cover), garlic, baking soda, salt, coriander stems and curry powder. You can use coconut milk instead of butter.
Bring to full pressure and cook for 30-40 mins, allow to depressurise.
Remove vegetables with a slotted spoon and put in a blender with a small amount of the cooking liquid. Run the blender and add the juice of one orange, a tablespoon of fish sauce and water/cooking liquid until the soup is smooth and the texture is as thick-thin as you prefer.
Return to the pan, add chopped coriander and spinach and heat through to serve.

Fried onions are made by Julienning an onion and shallow frying in abundant oil over a high heat til they are crispy. Do Remove with a slotted spoon and dry on paper towels.

I also roasted half the squash in an oven at 350f rubbed with oil and salt.

If you don’t like the orange in the soup, use a little lemon juice or some sherry vinegar.

If you don’t have a pressure cooker, either roast or sautée the vegetables before boiling so that they get a caramelised flavour.

You have to understand the heat.
When you put a steak onto a pan the steak soaks up the heat and cools the pan down.
This is why people tend to have the pan too high to start because it cools down to the proper temp.

A good example of this was when I was working friers in a grillhouse, we would do an unreal amount of platters, chicken wings, tendies, onion rings, fries, burnt ends and I had to go through training on how to manage fluctuatng heat.
Dumping a large order of wings would legit drop the temperature by 20 degrees c.

For your problem though the proper answer would likely be to double sear it.
Put it on the pan with plenty of oil/butter at the initial temp and sear it, then take it off the pan and flip it over after a short wait.

Personally when I do steak I sear at the end, similar to how sous vide does it, get it just below temp, rest it then flash it fast.

Tipo "00" flour slow fermented for 4 days. Cooked on 6mm pizza steel I made at work.

Sauce tablespoon olive oil, fry 2 anchovy fillets, add garlic, red pepper flakes, oregano. Add San Marzano tomatoes, little sugar, a little salt, simmer for about 40 minutes.

Bake for approximately 3 minutes on the steel with the oven switched to broil.
