Yeah, people tend to be overly cautious with carbonara when they suggest things like mixing in a bowl or removing your pan from the heat minutes ahead of time. Unless you're boiling your pasta at 1000°, tossing and stirring over low heat with plenty of pasta water is the way to get a thick and creamy emulsion.

Cocktails are mixed with strong alcohol. I'm not sure it's technically enough to sanitize it but it will sure help.
