Haddock, batter'd it myself. No recipe really just some salt+pepper+flour+egg+panko, shallow-fried it at around 350 until it was done less than 10 minutes.

Mash is potato + sweet potato + carrots + butter + dash of milk + cheddar cheese + dash of maple syrup

Looks nice OP. Just from personal experience though, while haddock is the OG for fish n chips it breaks apart too easily into a stringy and chewy mess when you cut into it. I much prefer cod both for flavor and as it holds together much nicer.
