Depending on the meal I like to push the heat to the upper end of what is enjoyable and over time I have naturally built a resistance to eat and now I have to resort to stuff like ghost peppers to be satisfied. As that kind of heat is not easily available where I live I have to order my sauces online and at that point I might as well order a whole bunch of different sauces and start a "collection".
The different sauces really add different things to a dish. They can vary greatly in heat, acidity, smoke, fruitiness, garlic and may have additional spices and herbs added.
Heat is a sensation, not a flavour. The sensation may overpower flavour but resistance to heat does not mean loss of taste.
