i recently tried cooking pork chops for the first time
i originally wanted to bake it but i don't have a meat thermometer to check temperature so I decided to cook it on the stove top, bad idea
so i brined it over night in water, like I read on some guide, with a number of different things mixed in

I really fucked up Alton Brown's chicken-fried steak because I only went off the episode rather than also grabbing the written recipe to go with it. Turns out, the episode truncated the amount of needling actually required to get the texture you want and I didn't do it nearly enough.

The texture was fucking garbage and I ended it up tossing it out. It was a few months back and I haven't cleansed myself of my disgust to give it another shot. One day, though, I really wanna make an amazing and tender chicken-fried steak.

If you knew anything about breadmaking you'd know it takes very few grams of salt for hundreds of grams of flour to completely skew the chemistry and prohibit good yest development in your dough. That's not true. There is a myth that indicates this, but there is no truth to it. Salt will only affect the yeast if you dump the full quantity directly into the yeast before distributing through the dough, but if you do that it won't matter how much salt there is.
