okay so normal mozarella is shit in pizzas because when it melts it gets all greasy and soupy but i don't have acces to low moisture low fat mozarel so can do this:

>melt normal mozarella
>skim the grease and moisture
>freeze it
>put that on the pizza

What's wrong with mozz on pizza? There are plenty of times I add fresh mozz when I'm reheating leftover pizza and I've never had it turn out greasy or soupy.

As long as you used here and there like a napolitan pizza it's fine to use fresh mozz, but you can't grate fresh mozz and use it like a whole layer of cheese, too much water content.
