You spend 1 day seasoning it, and it's good for life.

The regular maintenance is about the same as any other pan, except you can't leave it wet so you have to make sure you dry it well.

That's literally the only difference from how i treat my stainless steel pans.

if you turn it down after searing enough to not burn the butter you're cooking it too slow to get a nice delineation between sear and low temp interior, causing grayness.

also cast iron is trash for pan sauces because you can hardly see the fond buildup on the black surface. Also easier to scorch sauces and other things because burned fond is impossible to see on the black background
