I have a bunch kippered herring in my pantry that I want to use. Usually I just eat it on crackers with hot sauce, but I want to actually try using it as an ingredient in something. Any recommendations? I’m thinking of making some potato fritters with it.

i know it's not exactly what you want, but i made this spread a couple of times and i just have to shill it. the original calls for anchovies but i reckon you can use the herring too.
