I grew up next to a harbor in Southern California. Spent a lot of days at the fish and chip place there. I'd eat my fish with ketchup and my fries with tartar sauce, sometimes both with the shrimp cocktail sauce. Try it.

Last year I had ray in a fish&chips shop in Dublin. It was wonderful, A fair amount of the volume was the cartilage they have instead of bones, but that's a lot easier to deal with than bones, and the flesh was tender and tasty.

no they served it on a little basket with some waxy paper. I used to put ketchup on the fries and throw them to seagulls. Ever since then seagulls have little red marks on their beaks. Probably was there before I did that.

Tomato sauce, tartare sauce, lemon or vinegar. There are a couple of american style mayo options that involve blending it with tomato sauce / hot sauce / whatever. Cocktail sauce?
