Holy shit, DO NOT chop up and freeze onions! I thought I would stock up so I don't have to go out as much. Wasted like 12 onions. Took some out to saute today. There was a disgusting musty wet dog smell! What a fucking waste! I learned my lesson and will only use fresh from now on. Plus they should last up to a couple of months whole in the fridge anyways.

Did you freeze them immediately after cutting? Onions do start to get an odd smell and taste if they sit for too long after cutting, from the chemical reaction that makes your eyes burn I guess.

Yes they will turn out mushy, but they are perfect for anything requiring caramelized onions. Work well for roasts and soups and stews.

Although it is best not to chop them beforehand. Just peel them and freeze them whole.

Maybe I'm doing something wrong, but home freezing most veg (aside from things like peas) isn't worth the hassle. The water leaches out as you cook and the texture is ruined.

you're not supposed to refrigerate onions either. diced onions, sure. but whole onions will basically have an orgy in your fridge and spoil more quickly. as a general rule, if it's not refrigerated at the grocery store, it doesn't need to be refrigerated at home.

Yeah this, I have found if I need to save half an onion tho that if you take all the skin off and let it dry on the counter before you bag it and put it in the fridge the onion will stay good for like 5 days

I don't have this issue with frozen onions. They certainly aren't as flavorful as fresh, but it's not a terrible change. Pretty much any veggie with a decent sugar level freezes well in my opinion, especially carrots and bell peppers.

I don't think that's a good general rule. Most of the vegetables not refrigerated at the store will fare better refrigerated at home. I'd say a better general rule is that roots tend to be best stored unrefrigerated, with carrots being a notable exception.
